Boozy M&M Cookies
Ingredients
1 stick butter, softened to room temperature
½ cup brown sugar, packed
¼ cup white granulated sugar
1 egg
1 tablespoon Kahlua, plus more for brushing on top
½ teaspoon salt
½ teaspoon baking soda
1 ½ cups flour
1 cup red & green M&Ms
Steps
Add 1 stick of softened butter to a bowl of a stand mixer
Add ½ cup of white granulated sugar and ½ cup of brown sugar to the mixer
Place the paddle attachment on the mixer and cream the butter and sugar together until smooth
Scrape down the sides of the mixer bowl as needed
Add 1 egg and beat again until combined
Add 1 tablespoon of Kahlua and beat again
Add a ½ teaspoon of baking soda and a ½ teaspoon of salt to the mixer
Gradually add 1 and a half cups of flour a little at a time mixing between each addition until the flour is incorporated
Be sure to scrape the bowl so that any loose flour gets combined
Add 1 cup of red and green M&Ms to the batter and mix again until they are distributed
Place the cookie batter in the fridge to chill for at least 30 minutes
Then remove the batter from the fridge once chilled
Scoop tablespoon size pieces of dough into your hands
Use your hands to gently roll the dough into a round ball
Place the cookie dough ball on a parchment paper lined tray
Continue rolling out the remaining dough until you have filled your trays with your M&M cookies
Be sure to leave some space between the cookies as they will spread while baking
Bake the cookies in the oven at 350 degrees Fahrenheit for 9 to 11 minutes
Remove the cookies from the oven and allow to cool for 5 minutes on the baking sheet
Brush each warm cookie with some more Kahlua across the top, just enough to coat the cookie but not drench it
Transfer the Kahlua M&M cookies to a wire rack to cool completely
