Mint Meringues
Ingredients
2 egg whites
Pinch of cream of tartar
Pinch of salt
⅔ cup sugar
6 drops green food coloring
⅔ cup mint chocolate chips
Steps
Preheat the oven to 350 degrees Fahrenheit
Crack and separate 2 egg whites in a mixing bowl
Use a handheld electric mixer or the whisk of a stand mixer to beat the egg whites until white and bubbly
Add a pinch of salt and a pinch of cream of tartar to the egg whites
Beat the egg whites until they hold stiff peaks
Add a few drops of green food coloring to the egg whites and beat to incorporate
If needed, add another drop of green for a stronger color
Gradually add ⅔ cup of sugar to the egg whites beating the egg whites and sugar together until combined
The mixture will thicken as you add more sugar
Continue to beat until the batter is smooth
Add ⅓ cup of mint chocolate chips to the batter and gently fold until incorporated
Add another ⅓ cup of mint chocolate chips and fold again
Spoon small inch and a half size dollops of the batter onto a parchment paper lined tray leaving some space between each meringue
Place the meringues in the 350 degrees Fahrenheit preheated oven and then turn the oven heat off. Allow the cookies to sit in the oven overnight
Remove the cookies from the oven the next day when they are set
