Pignoli Cookies
Ingredients
7 ounce almond paste
1 cup sugar
2 egg whites
Handful of pignoli nuts
Steps
Preheat the oven to 350 degrees Fahrenheit
Line 2 baking sheets with parchment paper
Crack and separate 2 egg whites in a mixing bowl
Beat the egg whites with a handheld electric mixer until thick and bubbly and the egg whites hold stiff peaks
Next cut 7 ounces of almond paste into small discs and cut each disc into smaller pieces
Add all the almond paste pieces to the beaten egg whites, pinching any large pieces of almond paste to smaller bits
Beat the almond paste with the egg whites until combined
Do note, this will take some time for the almond paste to get incorporated with the egg whites - just keep beating
Add 1 cup of sugar to the mixture
Beat again until the sugar is dissolved and the cookie batter is smooth
Scrape down the sides of the bowl as needed and fully mix the batter again
Spoon small tablespoon size mounds of the batter onto the prepared baking trays
Leave some space between each cookie as they do spread some while baking
Next arrange a small cluster of pignoli nuts on top of each cookie
You can just sprinkle them all over the top of the cookie or arrange the pignolis into a 5 point star shape
Bake the pignoli cookies in the oven at 350 degrees Fahrenheit for 20 to 25 minutes or until light brown
Remove the cookies from the oven and allow to cool completely on the tray
Transfer the pignoli cookies to a separate platter to serve and enjoy!
