Apple Cinnamon Donuts
Ingredients
2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
2 tablespoons butter, melted
⅔ cup sugar
1 egg
¾ cup milk
1 teaspoon vanilla extract
1 cup grated apple, juice pressed out
For the topping
4 tablespoons butter, melted
½ cup sugar
2 teaspoons cinnamon
Steps
Take the time to peel and grate your apples. You could use the large holes of a traditional box grater or an electric food processor if you have the correct attachment.
Be sure to squeeze out the excess juice from the grated apple
In a bowl, whisk together 2 cups flour, 2 teaspoons baking powder, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon salt
In a separate bowl, combine ⅔ cup of sugar, ¾ cup milk, 1 teaspoon vanilla extract, 1 egg, and 2 tablespoons melted butter
Add 1 cup of grated apple to the sugar mixture and stir to incorporate
Add all the flour mixture to the sugar and apple mixture and gently mix until no dry flour remains
Thoroughly grease 2 standard size donut pants
Spoon and transfer all the donut batter to a clean gallon sized plastic ziploc bag
Cut a small tip of the corner of the plastic bag to create a hole
Squeeze the batter into the donut pans, filling each well about three quarters of the way full, being careful not to fill all the way to the top
Bake the apple cinnamon donuts in the oven at 375 degrees Fahrenheit for 10 to 13 minutes
Remove the donuts from the oven when they are soft but firm
Carefully transfer the donuts to a wire rack in order to cool completely
In a small bowl, whisk ½ cup sugar with 2 teaspoons cinnamon until combined
Working 1 donut at a time, take a donut, place on a small dish and brush all over with some melted butter, being sure to coat both sides
Transfer the buttered donut to the cinnamon sugar mixture and thoroughly cover the donut in the seasoning
Place your cinnamon-sugared donut on a platter and continue coating the remaining apple donuts, brushing them with some melted butter, and coating them with the cinnamon sugar topping until all the donuts are done
