Asian Slaw Salad with a Sesame Ginger Dressing
Ingredients
3 cups shredded purple cabbage
3 cups shredded green cabbage
1 red bell pepper, thinly sliced
1 cup of julienned carrot
Large handful cilantro, roughly chopped
⅓ cup dry roasted shelled peanuts
Sesame seeds, for sprinkling on top
Sesame ginger dressing
¼ cup rice vinegar
3 tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon honey
1 teaspoon minced garlic
½ teaspoon crushed red pepper flakes
½ teaspoon salt
1 tablespoon minced ginger
Black pepper, to taste
Steps
Place 3 cups of shredded purple cabbage, 3 cups of shredded green cabbage, 1 thinly sliced red bell pepper, 1 cup of julienne carrot, and 1 large bunch of roughly chopped cilantro in a large bowl
Stir all the sesame ginger dressing ingredients in a small measuring cup
Pour the prepared dressing all over the shredded and cut up vegetables
Toss the salad to combine all the vegetables together and distribute the dressing
Sprinkle about a ⅓ cup of peanuts all over the top of the slaw salad
Finish the Asian slaw salad by sprinkling a fine layer of sesame seeds over the top
