Spent Beer Grain Bacon & Cheddar Scones

Ingredients

  • 3 cups flour

  • 1 ½ cups spent beer grain

  • 2 tablespoons sugar

  • 4 teaspoons baking powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ cup (1 stick) cold butter, cut into pieces

  • 2 cups shredded cheddar cheese

  • 1 cup milk

  • 2 eggs

  • 6 to 8 slices bacon (6 ounces)


Steps

  1. In a large frying pan over medium heat, fry bacon until crispy, turning as needed

  2. Use tongs to remove bacon and transfer to a paper towel lined plate to drain excess grease and cool

  3. Crumble cooled, cooked bacon into small pieces

  4. Preheat the oven to 400 degrees Fahrenheit

  5. In a large bowl, add in the flour, spent beer grain, sugar, baking powder, salt and pepper

  6. Cut in 1 stick of cold butter using 2 forks until the mixture looks like coarse crumbs

  7. Stir in the cheese and the bacon to combine

  8. Add in the milk and the eggs and mix until the dough just comes together

  9. Lightly flour a clean, flat work space and gently knead the dough a few turns

  10. Divide the dough into 2 equal halves and transfer each half onto a parchment paper lined baking sheet

  11. Roll and flatten each dough half into an 8 inch round disc

  12. Cut each disc into 8 wedges but don’t separate the triangles

  13. Bake for 20 to 25 minutes or until golden brown
