Beer Macaroni & Cheese

Ingredients

  • 2 cup uncooked macaroni noodles

  • ⅔ cup beer

  • 8 ounces cheddar cheese (2 cups)

  • ½ cup sour cream

  • 1 egg

  • 2 tablespoons flour

  • 4 tablespoons butter

  • 1 tablespoon cornstarch

  • 1 cup breadcrumbs

  • 1 cup grated parmesan cheese

  • Black pepper, to taste


Steps

  1. Bring a large pot of water to a boil

  2. Cook pasta, 3 minutes less the cooking time and drain

  3. In a small bowl, combine sour cream, egg, cornstarch, and beer

  4. In a medium pot, melt the butter over medium-low heat

  5. Whisk in the flour, then slowly whisk in the beer mixture. Be sure to whisk constantly while mixture thickens

  6. Add the cheese, 1 cup at a time, and continue to stir until the cheese melts into the sauce

  7. Sprinkle in some black pepper to taste

  8. Add the cooked pasta noodles to the cheese sauce

  9. Transfer combined pasta and cheese sauce to an 8 inch by 8 inch baking dish

  10. Mix breadcrumbs and parmesan cheese and spread evenly on top. Note: You will not need to use all the breadcrumbs for a small quantity of macaroni and cheese.

  11. Bake at 350 degrees Fahrenheit for 30 minutes until the cheese is bubbly and the breadcrumbs are golden brown

  12. Serve and enjoy!
