Bourbon Chocolate Mousse
Ingredients
½ cup heavy whipping cream
¼ cup granulated sugar
2 tablespoons bourbon
1 teaspoon vanilla extract
½ cup dark chocolate chips
½ cup semi-sweet chocolate chips
4 egg whites
⅛ teaspoon salt
Steps
Pour ½ cup of heavy whipping cream in a small saucepan
Add ¼ cup of sugar to the saucepan
Turn the heat on medium low and stir to combine the sugar with the cream being careful to not let anything burn
Heat until the cream is boiling and then remove from heat
Stir in the bourbon and the vanilla extract
Sprinkle in the mixed chocolate chips and do not stir to 5 minutes
While the chocolate is resting, add 4 egg whites to a large bowl
Add ⅛ teaspoon of salt to the egg whites
Using an electric mixer, beat the egg whites and salt until stiff peaks form
Stir the chocolate until smooth
Gently fold the chocolate and cream mixture into the egg whites until smooth and incorporated
Divide the mousse equally into 4 jars
Place the mousse in the fridge to chill for at least 4 hours
