Broccoli Casserole
Ingredients
6 cups broccoli florets
1 10.5 ounce can cream of chicken soup
1 cup mayonnaise
2 eggs
1 cup grated white cheddar cheese
Salt, to taste
2 teaspoons black pepper
½ sleeve Ritz crackers
Steps
Begin by cutting a few heads of broccoli into 6 cups of florets removing the stalkier stem from the crown
As you’re cutting the broccoli, you want to make sure all the pieces are of approximate even size
Remove the lid from a large pot of boiling water and add 6 cups of the cut up broccoli florets to the pot and boil the broccoli for 3 minutes
Drain the water from the broccoli
In a large bowl, add 2 eggs, 1 cup mayonnaise, 1 ten ounce can of cream of chicken soup, 1 cup grated cheddar cheese, 2 teaspoons black pepper, a dash of salt to taste, and the cooked drained broccoli florets
Use a large spoon to thoroughly mix and combine the broccoli with the rest of the ingredients
Lightly grease a 9 by 13 inch baking dish
Transfer the broccoli mix to the greased dish and spread the broccoli smooth across the top
Next add about half a sleeve’s worth of Ritz crackers to a clean small plastic bag and crush the Ritz crackers into crumbs
Sprinkle the Ritz cracker crumbs all over the top of the broccoli
Bake the broccoli casserole in the oven at 350 degrees Fahrenheit for 30 minutes
Remove the broccoli casserole from the oven and enjoy
