Broccoli Tots
Ingredients
1 pound broccoli florets
1 to 2 eggs
1 cup shredded mozzarella cheese
⅔ cup Italian seasoned breadcrumbs
Steps
Remove the lid from a large pot of boiling water
Add 1 pound of broccoli florets
Push the broccoli down to ensure it is all submerged and cook for 3 minutes
Drain the broccoli florets and run them under cold water to shock them and prevent the broccoli from cooking more
Finely chop the broccoli into tiny minced pieces and add to a large bowl
Add 1 egg, 1 cup shredded mozzarella cheese, and ⅔ cup Italian seasoned breadcrumbs
Stir everything together until combined
Add another egg if the batter seems too dry and mix again to incorporate
Scoop a tablespoon size-ful of the broccoli mixture into your hand and press the mix together to form and shape a 1 inch size broccoli tot. Place the shaped tot on a parchment paper lined tray
Continue scooping the remaining broccoli mix and forming small tots
Bake the broccoli tots in the oven at 400 degrees Fahrenheit for 10 to 12 minutes
Remove the tots from the oven
Carefully flip each tot over to the other side
Return the tray of broccoli tots in the oven to bake for another 10 to 12 minutes
Remove the tots from the oven when crispy and enjoy
