Candied Citrus Peels
Ingredients
Oranges & lemons
Water
2 cups sugar, divided
Steps
Thoroughly wash a few oranges and lemons
Cut the ends off the fruit so they are flat
Next carefully score small sections in the peel, being careful to not cut all the way through the flesh, going around the entire fruit
Use your fingers to gently separate the peel from the fruit, keeping each section of scored peel intact
Cut each segment of peel into a thin quarter inch thick slice
If the white pith of the peel is really thick, carefully cut some of it away from the rest of the peel
Place all the sliced citrus peels in a medium sized saucepan
Fill the pan with water until the peels are completely covered
Place the pot on the stove and turn it on medium heat, covering to bring the water to a boil
Remove the lid when the water is boiling and allow the peels to boil for 12 minutes, stirring to ensure they are all submerged
Drain the peels after 12 minutes of boiling and add the drained peels back to the pot, refill with water until the peels are fully covered, return the pot to the stove and heat the water again and boil the peels for 12 minutes
This process helps remove the bitterness from the citrus peels
Drain the peels once more
To the empty pot, pour in 1 and a half cups of clean water followed by 1 and a half cups of sugar
Turn the stove on medium heat and stir until the sugar is fully dissolved
Add the peels to the warmed sugar water, stirring to combine, and heat until the liquid is just bubbling
Allow the citrus peels to simmer in the sugar water on low heat partially covered for 45 minutes
Add a half cup of sugar to a shallow dish
Remove the lid from the pot and then remove the candied peels from the sugar syrup allowed as much liquid to drip off them before placing them in the bowl of sugar
Toss to combine the sticky candied peels with the sugar until they are fully coated
Working one by one, transfer each sugar coated candied peel to a wire rack being sure to not let any of them touch each other and allow the peels to dry out completely for 1 to 2 days before storing
