Cheesy Garlicky Zucchini & Rice
Small half of yellow onion, finely diced
1 heaping teaspoon minced garlic
4 small zucchini, shredded
6 tablespoons butter
2 cups uncooked white rice
4 cups chicken broth, plus more
2 cups shredded cheddar cheese blend
Salt, to taste
Black pepper, to taste
Steps
Melt 6 tablespoons of butter over medium heat in a large saute pan
Add the diced onion to the melted butter
Stir and saute the onion for 5 minutes
Add 1 heaping teaspoonful of minced garlic to the onion
Stir and saute the garlic for 1 minute
Add 2 cups of uncooked white rice to the pan
Stir the rice with the garlic and onion
Pour 4 cups of chicken broth over the rice
Cover the pan and allow the rice to cook for 15 to 20 minutes
Remove the lid off the pan allowing any built up condensation to drip off
Stir the cooking rice
If as you are stirring the rice, the pan seems dry of liquid and the rice is sticking to the bottom of the pan, pour in some more chicken broth, about a half cup at a time
Add the shredded zucchini to the rice and stir until the zucchini and rice is combined
Sprinkle 2 cups of shredded cheese over the top of the zucchini and rice
Cover the pan and allow the cheese to melt and zucchini to cook for 5 minutes
Remove the lid off the pan allowing any built up condensation to drip off
Stir the melted cheese together with the zucchini and rice
Season with some salt and black pepper to taste
Stir the cheesy garlicky zucchini and rice once more
