Cheesy Garlicky Zucchini & Rice

  • Small half of yellow onion, finely diced

  • 1 heaping teaspoon minced garlic

  • 4 small zucchini, shredded

  • 6 tablespoons butter

  • 2 cups uncooked white rice

  • 4 cups chicken broth, plus more

  • 2 cups shredded cheddar cheese blend

  • Salt, to taste

  • Black pepper, to taste


Steps

  1. Melt 6 tablespoons of butter over medium heat in a large saute pan

  2. Add the diced onion to the melted butter

  3. Stir and saute the onion for 5 minutes

  4. Add 1 heaping teaspoonful of minced garlic to the onion

  5. Stir and saute the garlic for 1 minute

  6. Add 2 cups of uncooked white rice to the pan

  7. Stir the rice with the garlic and onion

  8. Pour 4 cups of chicken broth over the rice

  9. Cover the pan and allow the rice to cook for 15 to 20 minutes

  10. Remove the lid off the pan allowing any built up condensation to drip off

  11. Stir the cooking rice

  12. If as you are stirring the rice, the pan seems dry of liquid and the rice is sticking to the bottom of the pan, pour in some more chicken broth, about a half cup at a time

  13. Add the shredded zucchini to the rice and stir until the zucchini and rice is combined

  14. Sprinkle 2 cups of shredded cheese over the top of the zucchini and rice

  15. Cover the pan and allow the cheese to melt and zucchini to cook for 5 minutes

  16. Remove the lid off the pan allowing any built up condensation to drip off

  17. Stir the melted cheese together with the zucchini and rice

  18. Season with some salt and black pepper to taste

  19. Stir the cheesy garlicky zucchini and rice once more
