Chicken Garlic Zoodles
Ingredients
1 pound boneless, skinless chicken breasts
2 tablespoons olive oil, divided
1 ½ teaspoon salt
1 teaspoon black pepper
1 ½ teaspoon garlic powder
2 teaspoons Italian seasoning
4 tablespoons butter, divided
3 tablespoons chicken broth
1 tablespoon dried parsley
3 heaping teaspoons minced garlic
6 medium sized zucchini (2 ½ pounds worth)
¼ cup grated parmesan cheese, plus more for serving

Steps
Cut 1 pound of boneless skinless chicken breasts into ½ inch size cubes and place them in a medium sized bowl
Drizzle 1 tablespoon of olive oil over the cubed chicken
Season the chicken with 1 ½ teaspoons of salt, 1 teaspoon of black pepper, 1 ½ teaspoons of garlic powder, and 2 teaspoons of Italian seasoning
Stir the chicken with the oil and seasonings to combine and marinate for 30 minutes
Cut the ends of 6 medium sized zucchini
Use a julienne peeler to carefully peel long thin ribbons of zucchini, both the outer skin and inner flesh
As you julienne the zucchini, rotate it so you don’t peel any of the inner seeds
Place the zucchini noodles in a separate bowl to drain
Add 1 tablespoon of olive oil and 1 tablespoon of butter to a large nonstick pan
Allow the oil to heat and the butter to melt over medium heat as you stir them together and coat the pan
Add all the seasoned chicken to the pan and spread evenly across the bottom
Stir the chicken around as it cooks, ensuring all sides of the meat are just cooked through
Transfer the chicken to a separate clean bowl when it is all cooked
Add 3 tablespoons of butter, 3 tablespoons of chicken broth, and 1 tablespoon of dried parsley to the same saute pan
Turn the heat on medium to allow the butter to melt
Add 3 heaping teaspoons of minced garlic to the melted butter and stir as it sautes for 30 seconds to a minute
Add all the fresh zucchini noodles to the butter and garlic and toss to coat and combine with the pan
The zucchini should only cook for about 2 or 3 minutes
Add back all the chicken and stir to incorporate for another minute or two
Sprinkle ¼ cup of grated parmesan cheese on top of the chicken garlic zoodles and toss once more
