Bourbon Balls

Ingredients

  • 1 pound vanilla wafer cookies, finely crushed

  • 8 oz (2 cups) finely chopped pecans

  • 2 tablespoons cocoa powder

  • 3 tablespoons light corn syrup

  • 6 ounces bourbon

  • ½ cup sifted confectioners sugar


Steps

  1. In a large bowl, combine the vanilla wafer crumbs and the chopped pecans

  2. Add the cocoa powder and mix to combine

  3. Add in the corn syrup and mix again

  4. Pour in the bourbon and mix until thoroughly incorporated

  5. Pinch about 1 tablespoon of the mixture and use your hands to roll it into a ball

  6. Transfer the rolled ball onto a cookie sheet lined with wax paper

  7. Continue rolling out balls for the remaining mixture

  8. Set the rolled balls aside for 5 minutes

  9. Place the confectioners sugar in a small bowl

  10. Place the rolled balls in the confectioners sugar and evenly coat all sides of the bourbon ball

  11. Store in an air-tight container and refrigerate
