Chocolate Sugar Cookies

Ingredients

  • 1 cup (2 sticks) butter, softened

  • 1 cup sugar

  • 1 egg

  • ½ cup cocoa powder

  • 2 cups flour

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 1 teaspoon vanilla extract


Steps

  1. Cream the butter and the sugar in a stand mixer until light and fluffy

  2. Add the egg and vanilla extract mixing until well combined

    1. Scrape down the sides of the bowl as needed

  3. Add in the the baking powder and the salt and mix again

  4. Next, measure in a half cup of cocoa powder and mix until incorporated

  5. Gradually add in the flour and alternate mixing on low speed until no more visible flour remains

  6. Wrap the cookie dough in some plastic wrap and cover

  7. Refrigerate the cookie dough for 1 hour

  8. Preheat the oven to 350 degrees Fahrenheit

  9. Line two baking sheets with parchment paper

  10. Roll the cookie dough to ¼ of an inch thick

  11. Firmly press the desired cookie cutter shapes into the dough to cut the cookies

  12. Transfer the cut cookies to the parchment paper lined tray

  13. Bake the cookies for 8-10 minutes

  14. Remove the cookies from the oven and cool for 5 minutes

  15. Transfer the cookies to a wire rack to cool completely
