Eggnog Cookies
Ingredients
For the cookie
¾ cup butter, softened to room temperature
1 cup sugar
2 large egg yolks
1 teaspoon vanilla extract
½ teaspoon rum extract
½ cup eggnog
2 ¼ cups flour
1 teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon nutmeg
For the icing
2 cups powdered sugar
1 tablespoon white rum
¼ teaspoon nutmeg
2 tablespoons eggnog
Steps
For the cookie
Cream the butter and the sugar in a stand mixer until light and fluffy
Scrape down the sides of the bowl as needed
Add the egg yolks and mix until well combined
Add the vanilla extract, rum extract, and eggnog and mix again
In a separate bowl, stir together the flour, baking powder, cinnamon, and nutmeg
Gradually add the flour mixture to the mixer bowl, mixing between each addition and scraping down the sides of the bowl
Preheat the oven to 350 degrees Fahrenheit
Line two baking sheets with parchment paper
Scoop 1 ½ tablespoon, even-sized mounds of cookie dough out and gently shape into round balls
Place each ball of dough on the prepared tray
Continue shaping the cookie dough and placing the balls on the tray spaced about 2 inches apart from each other
Bake the cookies for 9 to 11 minutes
Remove the cookies from the oven and cool for 5 minutes
Transfer the cookies to a wire rack to cool completely
