Gingerbread Cookies

Ingredients

  • ¾ cup butter, softened to room temperature

  • ½ cup brown sugar

  • ½ cup molasses

  • 1 egg

  • 1 teaspoon vanilla extract

  • 3 to 3 ½ cups flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 tablespoon ground ginger

  • 1 tablespoon cinnamon

  • ½ teaspoon ground allspice/cloves

  • ½ teaspoon nutmeg


Steps

  1. Cream the butter and the sugar in a stand mixer until light and fluffy

    1. Scrape down the sides of the bowl as needed

  2. Add in egg, molasses and vanilla extract, and beat on medium speed until combined.

  3. In a separate bowl, stir together the flour, baking soda, salt, ginger, cinnamon, ALLSPICE, and nutmeg

  4. Gradually add the flour mixture to the mixer bowl, mixing between each addition and scraping down the sides of the bowl

  5. Divide the cookie dough in half and shape each dough half into a disk and cover with plastic wrap

  6. Refrigerate for at least 1 hour or overnight

  7. Preheat the oven to 350 degrees Fahrenheit

  8. Generously spread flour over a clean counter

  9. Line two baking sheets with parchment paper

  10. Roll the cookie dough to ¼ of an inch thick

  11. Firmly press the desired cookie cutter shapes into the dough to cut the cookies

  12. Transfer the cut cookies to the parchment paper lined tray

  13. Bake the cookies for 8-10 minutes

  14. Remove the cookies from the oven and cool for 5 minutes

  15. Transfer the cookies to a wire rack to cool completely

  16. Once the cookies are completely cool, decorate as desired
