Cinnamon Blueberry Muffins
Ingredients
1 ½ cups flour
¾ cups sugar
½ teaspoon salt
2 teaspoons baking powder
1 teaspoon cinnamon
1 ½ teaspoon vanilla extract
⅓ cup vegetable oil
1 egg
⅓ cup milk, or more as needed
1 cup blueberries
Steps
Preheat oven to 400 degrees Fahrenheit
Combine flour, sugar, salt, baking powder, and cinnamon in a medium-sized bowl
Pour in vegetable oil, egg, and milk and mix with flour mixture
If needed, add in 2 to 3 more tablespoons of milk to achieve a smooth and scoopable batter
Fold in blueberries with batter
Line muffin tin with paper cups
Fill batter to about ⅔ of the way full in each cup
Bake for 20 minutes in the preheated oven
