Cinnamon Blueberry Muffins

Ingredients

  • 1 ½ cups flour

  • ¾ cups sugar

  • ½ teaspoon salt

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • 1 ½ teaspoon vanilla extract

  • ⅓ cup vegetable oil

  • 1 egg

  • ⅓ cup milk, or more as needed

  • 1 cup blueberries

Steps

  1. Preheat oven to 400 degrees Fahrenheit

  2. Combine flour, sugar, salt, baking powder, and cinnamon in a medium-sized bowl

  3. Pour in vegetable oil, egg, and milk and mix with flour mixture

  4. If needed, add in 2 to 3 more tablespoons of milk to achieve a smooth and scoopable batter

  5. Fold in blueberries with batter

  6. Line muffin tin with paper cups

  7. Fill batter to about ⅔ of the way full in each cup

  8. Bake for 20 minutes in the preheated oven
