Cornbread Muffins
Ingredients
1 cup all-purpose flour
1 cup yellow cornmeal
⅔ cup white sugar
3 ½ teaspoons baking powder
1 teaspoon salt
1 egg
1 cup milk
⅓ cup vegetable oil
Steps
Preheat oven to 375 degrees Fahrenheit
Thoroughly grease a 12-cup standard sized muffin tray with cooking spray
In a bowl, combine flour, cornmeal, sugar, baking powder, salt, egg, milk, and oil until well combined
Pour batter into prepared muffin tray, filling each cup to approximately ½ to ⅔ of the way full (The batter makes enough for exactly 12 muffins)
Bake in preheated oven for 17 to 23 minutes, or until toothpick inserted in the middle of a muffin comes out clean
