Cornbread Muffins

Ingredients

  • 1 cup all-purpose flour

  • 1 cup yellow cornmeal

  • ⅔ cup white sugar

  • 3 ½ teaspoons baking powder

  • 1 teaspoon salt

  • 1 egg

  • 1 cup milk

  • ⅓ cup vegetable oil


Steps

  1. Preheat oven to 375 degrees Fahrenheit

  2. Thoroughly grease a 12-cup standard sized muffin tray with cooking spray

  3. In a bowl, combine flour, cornmeal, sugar, baking powder, salt, egg, milk, and oil until well combined

  4. Pour batter into prepared muffin tray, filling each cup to approximately ½ to ⅔ of the way full (The batter makes enough for exactly 12 muffins)

  5. Bake in preheated oven for 17 to 23 minutes, or until toothpick inserted in the middle of a muffin comes out clean
