Almond Gruyere Bread

Ingredients

  • ½ cup sliced almonds

  • 1 cup water

  • ½ cup (1 stick) butter

  • 2 tablespoons Dijon mustard

  • 1 cup flour

  • 4 eggs

  • ½ cup sliced green onions (scallions)

  • ¾ cup shredded gruyere cheese

Steps

  1. Preheat the oven to 350 degrees Fahrenheit

  2. Spread the almonds on a baking sheet and toast for 10 minutes or until light brown

    1. Stir the almonds once halfway in between toasting

  3. Heat the water, butter, and mustard to a rolling boil in a large saucepan

  4. Stir in the flour with a wooden spoon, heating until the mixture forms a ball

  5. Remove from heat

  6. Beat in eggs, one at a time, until mixture is smooth and elastic

  7. Stir in green onions and ¼ cup of the almonds

  8. Drop by spoonfuls on baking sheet lined with parchment paper to form an 8-inch ring with a 4-inch circle in the center

  9. Sprinkle the shredded gruyere cheese and remaining almonds on top of the ring

  10. Bake at 400 degrees Fahrenheit for 1 hour, until well browned and hollow sounding when tapped on side
