Irish Soda Bread
Ingredients
4 cups flour, plus more for rolling
1 tablespoon sugar
1 teaspoon baking soda
1 teaspoon salt
4 tablespoons cold, cubed butter
1 cup dried currants
1 ¾ cup buttermilk
1 egg
Steps
In a large bowl whisk together 4 cups flour, 1 tablespoon sugar, 1 teaspoon baking soda, and 1 teaspoon salt
Use a pastry cutter to cut in 4 tablespoons of cold, cubed butter until the mixture is in pea sized crumbs
Stir in 1 cup of dried currants
On the side, whisk 1 egg with 1 ¾ cups buttermilk
Pour the buttermilk and egg into the flour mixture and gently fold together until a shaggy dough is formed
Spread out some flour on the counter and turn out the soda bread dough
Cover the top of the dough with some more flour and gently knead the dough just a few turns until everything holds together
Pat the dough down shaping it into a round ball and place it on a parchment paper lined tray
Score the bread with 2 deep cuts using a sharp knife into a cross shape. You want to cut all the way across the bread and at least a third of the way deep
Bake the Irish soda bread in the oven at 400 degrees Fahrenheit for 45 to 50 minutes
Remove the Irish soda bread from the oven when golden brown and allow to cool for at least 20 minutes before enjoying
