LA Galbi

Ingredients

  • 3 pounds sliced beef short rib, bone in

  • 1 ½ large white/yellow onions

  • 3 heaping tablespoons minced garlic (8 to 10 whole cloves)

  • 1 heaping teaspoon ginger

  • ½ cup soy sauce

  • ½ cup water

  • 2 tablespoons honey

  • Black pepper

  • 2 teaspoons sesame oil

  • Sesame seeds, optional


Steps

  1. Remove the ribs from the packaging and place in a large bowl on the bottom of a sink

  2. Gently wash each slice of meat under cold running water to clean the ribs of any small loose bone fragments and debris

  3. Drain the meat and set aside

  4. Pour ½ cup of soy sauce and ½ cup of water into a 9 inch by 13 inch dish

  5. Stir in about 2 tablespoons of honey with the soy sauce and water. Add more honey if you want sweeter galbi and use less honey or no honey if you don’t want your galbi to be too sweet

  6. In a food processor, add the onion, garlic, and ginger and pulse until no large chunks remain and the mixture is fairly smooth

  7. Add the pureed onion and garlic mix to the 9 inch by 13 inch dish with the soy sauce and water

  8. Season with some black pepper to taste,

  9. Measure in 2 teaspoons of sesame oil

  10. Place the sliced short rib in the marinade one strip at a time ensuring each piece gets covered. Stir the marinade around with the meat as needed

  11. Cover the dish with plastic wrap

  12. Allow the ribs to marinate in the fridge for 1 hour to 24 hours

  13. Preheat a grill to medium-high heat

  14. Place the marinated meat on the grill to cook

  15. Periodically flip the ribs to cook evenly on both sides

  16. When the galbi is finished cooking, transfer it to a separate platter and set aside

  17. Before serving, cut the galbi into smaller pieces in between each slice of bone

  18. Optionally: sprinkle the LA galbi with some sesame seeds on top
