Lasagna Soup
Ingredients
1 medium sized onion, diced
1 pound Italian sausage, casing removed
3 cloves garlic, minced
½ pound lasagna noodles, broken into 1 ½ inch size pieces
Salt, to taste
Black pepper, to taste
Crushed red pepper flakes, to taste
2 teaspoons Italian seasoning
24 ounce jar tomato sauce plus 2 cups of water to rinse out empty jar
4 cups chicken stock
½ cup grated parmesan cheese
Freshly slivered basil, for serving
Ricotta cheese, for serving
Thinly sliced mozzarella cheese, for serving
Steps
To a large pot, add 1 pound of de-cased Italian sausage and 1 medium diced onion
With the stove on medium heat, cook the Italian sausage with the onion, using a spoon to break the meat into small pieces, cooking until brown while also sauteing the onion until soft
Next add all the minced garlic and stir and saute for 30 seconds
Season with a dash of salt, plenty of black pepper, some crushed red pepper flakes to taste, and 2 teaspoons of Italian seasoning
Stir again to combine
Pour in a 24 ounce jar of tomato sauce and add 4 cups of chicken stock
Pour in 2 cups of water refilled into the empty tomato sauce jar
Stir to distribute and bring the liquid to a boil
Stir the soup when it is boiling and add a ½ pound of the broken lasagna noodle pieces
Stir and cook the noodles in the soup until al dente according to the packaging directions
Add in about a half cup of grated parmesan cheese to the soup and stir again to combine
Ladle some of the lasagna soup in a small bowl, add a spoonful of ricotta cheese, a handful of thinly sliced mozzarella cheese, and a pinch of the freshly chopped basil and enjoy
