Lemon Ricotta Cookies
Ingredients
1 stick butter, softened to room temperature
1 ½ cups granulated sugar
2 eggs
1 15-ounce container ricotta cheese
1 lemon zested
2 ½ tablespoons freshly squeezed lemon juice
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
2 ½ cups flour
For the lemon glaze
1 ½ cups powdered sugar
1 lemon zested
3 tablespoons freshly squeezed lemon juice
Steps
In a stand mixer bowl, add 1 stick of softened butter and 1 ½ cups of sugar
Beat the butter and sugar together until light and creamy
Add 2 eggs, 1 at a time, beating well between each addition
Scrape down the sides of the mixer bowl as needed
Add a 15-ounce container of ricotta cheese to the mixer and beat again until smooth
Add the zest of one whole lemon and 2 ½ tablespoons of fresh lemon juice to the bowl and beat to combine
Add a ½ teaspoon of salt, ½ teaspoon of baking powder, ½ teaspoon of baking soda to the mixer
Gradually add 2 ½ cups of flour to the batter, mixing between additions
Scrape down the sides of the bowl to ensure all the dry flour is incorporated
After all the flour has been added, scrape off the paddle attachment
Cover the bowl of cookie batter with some plastic wrap
Place the cookie batter in the fridge to chill for at least 4 hours or overnight
Preheat the oven to 375 degrees Fahrenheit
Remove the plastic wrap from the bowl
Spoon out tablespoon size clumps of batter and gently roll into a small ball with your hands
Place the cookie dough on a parchment paper lined tray
Leave an inch or two of space between each cookie on the tray
Bake the cookies in the oven at 375 degrees Fahrenheit for 12 to 15 minutes
Remove the cookies from the oven and allow to cool on the tray for 15 minutes
Transfer the cookies to a wire rack to cool completely
In a small bowl, add 1 ½ cups of powdered sugar, the zest of 1 whole lemon and 3 scant tablespoons of freshly squeezed lemon juice
Stir the ingredients together to form a smooth glaze
Spoon and spread a small dollop of the lemon glaze on top of each cookie and let the glazed cookies set for at least 2 hours and enjoy!
