Loaded Nachos

Ingredients

  • Tortilla chips

  • 1 one-ounce packet taco seasoning

  • 1 pound ground beef

  • 1 sweet bell pepper, diced in half inch pieces

  • 1 15-ounce can black beans

  • 1 15-ounce can corn, drained

  • Guacamole

  • Salsa

  • Sour cream

  • Shredded cheese


Steps

  1. Cook 1 pound of 80/20 ground beef in a saute pan over medium heat

  2. As the beef cooks, break up the meat into smaller pieces using a wooden spoon

  3. When the meat is almost all the way cooked, stir in the taco seasoning

  4. Pour 1 can of black beans including the liquid over the seasoned meat

  5. Stir the mixture to combine the meat with the beans

  6. Allow the pan to simmer for 10 minutes

  7. Lay out a mound of tortilla chips onto a half sheet baking tray and use your hands to spread them into an even layer

  8. Spoon the beef and beans mixture all over the top of the chips

    1. You might not use all the meat, it depends on how much you want to load your nachos. Save any extra meat and beans to cook with rice for another dish

  9. Spread 1 15-ounce can of drained corn all over the top of the meat

  10. Sprinkle the diced pepper on top

  11. Spoon on some salsa all over (you can add as much or as little salsa as you want)

  12. Top the nachos with shredded cheese

  13. Bake in the oven at 375 degrees Fahrenheit for 10 minutes or until the cheese has melted, paying attention so the tortilla chips don’t burn

  14. Remove the nachos from the oven and dollop with some sour cream

  15. Finish the loaded nachos by spreading guacamole all over
