Meatball Subs
Ingredients
Meatballs
1 1/2 pound lean ground beef
1/2 cup breadcrumbs
1/3 cup grated Parmesan cheese
1/4 cup packed finely chopped parsley
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Italian seasoning
1 egg
2 teaspoon minced garlic
Sauce
2 tablespoons olive oil
2 teaspoon minced garlic
28-ounce can crushed tomatoes
2 tablespoon chopped parsley
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
Assembly
Hoagie rolls
Olive oil
Sliced provolone cheese
Chopped parsley, for garnish
Steps
Add all the meatball ingredients to a large bowl
Combine the ingredients all together with your hands until everything is incorporated
Scoop out small sections of the meat and use your hands to roll out the meatballs of even size about 1 inch in diameter
Place the meatballs on a baking sheet with some space in between each other
You should have 24 meatballs of even size
Bake meatballs in oven at 350 degrees Fahrenheit for 25 minutes
While the meatballs are baking, make the sauce
For the sauce, heat 2 tablespoons of olive oil and 2 teaspoons of minced garlic in a Dutch oven pan over medium heat
Stir to saute the garlic with the oil for 30 seconds. Allow the garlic to lightly crisp and the oil to heat
Pour in a 28-ounce can of crushed tomatoes to the pan and stir to combine with the garlic and oil
Add 2 tablespoons of chopped parsley, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of Italian seasoning, and ½ teaspoon of crushed red pepper flakes to the sauce
Stir to combine the seasonings with the sauce as everything gently simmers while the meatballs finish cooking
Remove the cooked meatballs from the oven and add to the finished sauce
Gently stir to cover all the meatballs in the sauce
Split open 4 hoagie rolls and place them in a baking dish
Brush some olive oil on the insides of each roll
Toast the rolls in the oven at 425 degrees Fahrenheit for 5 minutes and then remove from the oven when the rolls are crisp
Place 4 meatballs inside each roll in a line and spoon some extra sauce on top of the meatballs
Cover the meatballs with some sliced provolone cheese
Bake the subs in the oven at 425 degrees Fahrenheit for 5 minutes or until the cheese has melted
Remove the subs from the oven to serve warm with some more parsley sprinkled on top
