New Year's Apple Bundt Cake
Ingredients
6 apples, cut into 1 inch pieces (about 7 cups)
5 tablespoons sugar
3 teaspoons cinnamon
4 eggs
2 cups sugar
3 cups all purpose flour minus 6 tablespoons flour (sifted then measured)
1 tablespoon baking powder
1 teaspoon salt
1 cup vegetable oil
¼ cup orange juice
2 ½ teaspoons vanilla extract
Steps
Add the cut apples, cinnamon and 5 tablespoons of sugar in a large bowl and toss to combine
Crack 4 eggs in a mixer bowl
Beat the eggs at high speed for at least 2 minutes, until thick and pale yellow
Gradually add in 2 cups of sugar, beating until blended
If not already prepared, sift the flour and measure 3 cups of all purpose flour minus 6 tablespoons of flour
Stir together the flour, baking powder and salt
Separately, stir together the vegetable oil with the orange juice
Gradually add the flour mixture to the egg mixture alternating with the oil mixture, beating at low speed until all combined
Add the vanilla extract and mix until just blended
Thoroughly grease with butter and flour a 15 cup bundt pan
Pour half the cake batter into the prepared pan
Arrange half of the apple mixture on top of the batter
Pour the remaining half of the cake batter on top of the apples
Arrange the remaining half of the apple mixture on top of the second layer of batter
Bake the apple cake in the oven at 350 degrees Fahrenheit for 1 hour and 30 minutes or until golden and set
Remove the cake from the oven and allow to cool for 10 minutes
Invert the bundt pan onto a flat dish to remove the cake from the pan
