Nonna's Lentils

Ingredients

  • 1 cup (½ pound) green lentils

  • 4 cups water

  • 2 small celery stalks, finely diced

  • Salt, to taste

  • Garlic powder, to taste

  • Black pepper, to taste

  • 2 tablespoons olive oil


Steps

  1. Pick over 1 cup or a half pound of dried green lentils to remove any debris or shriveled beans

  2. Thoroughly rinse and drain the lentils with some water

  3. Add the lentils to a saucepan

  4. Add some finely diced celery to the lentils

  5. Cover the lentils with 4 cups of water

  6. Bring the water to a boil

  7. Reduce the heat to medium-low, cover the pan, and cook for 30 to 40 minutes until the lentils are soft and tender

  8. As you cook the lentils, periodically stir them and add more water as needed if the remaining water has cooked away

  9. Season the lentils with some salt, garlic powder, and black pepper

  10. When the lentils are done cooking, finish off by stirring in some olive oil
