Parmesan Crusted Salmon

Ingredients

  • 1 ½ pound boneless salmon filet

  • ⅔ cup panko bread crumbs

  • ⅔ cup finely grated parmesan cheese

  • 1 heaping teaspoon dried parsley

  • 2 teaspoons minced garlic

  • 3 tablespoons melted butter

  • ½ teaspoon salt

  • Black pepper, to taste

  • Dried chives, to sprinkle

  • 1 lemon, to serve and squeeze


Steps

  1. Preheat the oven to 400 degrees Fahrenheit

  2. Line a baking sheet with some parchment paper

  3. Cut a 1 ½ pound boneless salmon filet into 4 even sized pieces

  4. Pat each salmon piece dry with some paper towels and place on the prepared tray, skin side down

  5. In a small bowl, combine ⅔ cup of panko, ⅔ cup of parmesan cheese, 1 teaspoon parsley, 2 teaspoons of minced garlic, ½ teaspoon of salt, and black pepper to taste

  6. Then stir in 3 tablespoons of melted butter

  7. Spoon the breadcrumb topping all over the salmon covering the top and sides of each piece

  8. Use your fingers to pat down the breadcrumb topping all over the salmon

  9. Bake the parmesan crusted salmon in the oven at 400 degrees Fahrenheit for 12 to 15 minutes

  10. While the salmon is baking, use the time to slice up some fresh lemon wedges

  11. Remove the salmon from the oven when it reads 145 degrees Fahrenheit internally

  12. Squeeze on some fresh lemon juice and sprinkle with some chopped chives
