Peach Cobbler
Ingredients
Filling
6 peaches
½ cup sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
¼ teaspoon salt
Biscuit topping
1 ½ cups flour
½ cup sugar
2 teaspoons baking powder
½ teaspoon cinnamon
¼ teaspoon salt
1 stick cold, cubed butter
¾ cup milk
Cinnamon-sugar blend
Steps
Carefully cut and gently score a cross on the bottoms of 6 peaches
Bring a large pot of water to a boil and place each scored peach in the water and boil for 60 to 90 seconds
Remove the peaches from the pot and immediately transfer to an ice bath to shock the fruit and prevent them from cooking
The process of boiling the peaches will make it a lot easier to remove the skin from them
After the peaches have cooled, just use your fingers to peel the corners from the precut cross and simply remove the skin from the peaches
Cut the peeled peaches in half, remove the pits, chop into smaller sections, and thinly slice the peaches into quarter inch thick slices and place the slices in a large bowl
Add ½ cup sugar, 1 tablespoon cornstarch, 1 tablespoon lemon juice, and ¼ teaspoon salt to the peaches
Toss to combine the peaches with the sugar, cornstarch, lemon juice and salt
Lightly grease a 9 by 13 inch baking dish
Transfer the tossed peaches to the greased baking dish and spread the peaches smooth across the top of the dish
Bake the peaches in the oven at 350 degrees Fahrenheit for 10 minutes
Then remove the peaches from the oven and set to the side as you make the topping
Whisk together 1 ½ cups flour, ½ cup sugar, 2 teaspoons baking powder, ½ teaspoon cinnamon, and ¼ teaspoon salt in a large bowl
Add 1 stick of cold cubed butter to the bowl
Use a pastry cutter to cut the butter in with the flour until the mixture resembles coarse crumbs
Pour ¾ cups of milk to the flour and butter crumbs and stir to just incorporate the milk
Spoon the prepared cobbler topping all over the top of the pre-baked peaches, spreading the mixture as smooth as possible
Sprinkle some additional cinnamon sugar topping all over the cobbler
Bake the peach cobbler in the oven at 350 degrees Fahrenheit for 45 minutes and remove when the peaches are bubbly
Serve and enjoy warm!
