Pizza Muffins
Ingredients
1 ½ cups flour
3 teaspoons Italian seasoning
½ teaspoon garlic powder
2 teaspoons baking powder
¼ teaspoon salt
½ cup shredded carrot
1 cup milk
2 eggs
2 tablespoons olive oil
¾ cup shredded mozzarella cheese
¼ cup grated parmesan cheese
⅓ cup diced pepperoni
¾ cup pizza sauce
Steps
In a large bowl, whisk together and combine 1 ½ cups flour, 3 teaspoons Italian seasoning, ½ teaspoon garlic powder, 2 teaspoons baking powder, ¼ teaspoon of salt, and ½ cup shredded carrot
Stir together and then make a well in the center of the bowl
To the well, add 1 cup of milk, 2 eggs, ⅓ cup shredded mozzarella cheese, ¼ cup grated parmesan cheese, and ¼ cup diced pepperoni
Stir to combine the milk and eggs with the cheeses and pepperoni, slowly pulling in and incorporating the flour mixture
Mix until everything has been combined
Thoroughly grease a standard size 12 cup muffin tin
Fill each cup ¾ full being sure to evenly fill and distribute the muffin batter amongst all the cups
Add a small tablespoon size-full of tomato sauce in the center on top of each muffin
Sprinkle a pinch of shredded mozzarella cheese on top
Finish by scattering a few of the small pepperoni pieces on top of the cheese
Gently press the toppings down on the muffins
Bake the pizza muffins in the oven at 375 degrees Fahrenheit for 20 minutes
Remove the pizza muffins from the oven and allow them to cool for 5 to 10 minutes
