Pumpkin Baked Ziti
Ingredients
1 pound ziti
1 pound chorizo sausage (raw & casings removed)
1 teaspoon minced garlic
1 small onion, diced
1 teaspoon dried sage
1 15-ounce can pumpkin puree
1 ½ cups vegetable broth
¼ cup grated parmesan cheese
½ cup shredded mozzarella cheese
Salt, to taste
Black pepper, to taste
¼ teaspoon nutmeg
Crushed red pepper flakes, to taste
1 tablespoon olive oil
¼ cup milk
Steps
Add 1 tablespoon of olive oil to a large saute pan
Add the diced onion and 1 pound of the chorizo sausage to the pan
Turn the stove on medium heat to cook the chorizo until browned, breaking it up and crumbling into small pieces, and saute the onions until soft
Lower the heat to medium low, add 1 teaspoon of minced garlic and stir to combine
Season with ¼ teaspoon ground nutmeg, 1 teaspoon dried sage, some salt, black pepper, and hot red pepper flakes to taste
Stir to incorporate
Pour in 1 ½ cups of broth and add in a 15 ounce can of pumpkin puree and stir to combine
On the side, cook 1 pound of ziti pasta until al dente according to the packaging directions
Pour in ¼ cup of milk to the pumpkin sauce and stir to incorporate
Add a ¼ cup of grated parmesan cheese and stir once more
Add the cooked, drained pasta noodles to the finished pumpkin chorizo sauce
Thoroughly mix the pasta with the sauce until all the sauce is distributed and the noodles are all coated
Transfer all the pumpkin ziti to a greased 9 by 13 inch baking dish
Then spread the pasta smooth across the top of the dish
Sprinkle ½ cup shredded mozzarella cheese all over the top of the ziti
Bake the pumpkin ziti in the oven at 350 degrees Fahrenheit for 30 minutes and remove from the oven when the cheese is melted
