Pumpkin Cookies
Ingredients
3 cups flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1 cup (2 sticks) butter, softened to room temperature
⅔ cup granulated white sugar
⅓ cup packed brown sugar
1 egg
½ cup pumpkin puree
1 teaspoon vanilla extract
Steps
Cream the butter and the sugars in a stand mixer until light and fluffy
Add the egg and mix until well combined
Scrape down the sides of the bowl as needed
Add the vanilla extract and pumpkin puree and mix until combined
Add the baking powder, cinnamon, and pumpkin pie spice and mix again
Gradually add 3 cups of flour to the dough, mixing between each flour addition and scraping down the sides of the bowl
Transfer the cookie dough to a sheet of plastic wrap and cover the dough
Refrigerate the dough for at least 1 hour
Preheat the oven to 350 degrees Fahrenheit
Generously spread flour over a clean counter
Line two baking sheets with parchment paper
Working in sections, roll the dough out until it is ¼ of an inch thick (keep the remaining dough refrigerated as you work)
Firmly press the desired cookie cutter shapes into the dough to cut the cookies
Transfer the cut cookies to the parchment paper lined tray
Bake the cookies for 9 to 11 minutes
Remove the cookies from the oven and cool for 5 minutes
Transfer the cookies to a wire rack to cool completely
