Pumpkin French Toast
Ingredients
For the French Toast
4 eggs
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon dried ground ginger
⅔ cup milk
½ cup pumpkin puree
1 teaspoon vanilla extract
Butter
8 slices thick white bread
For the Whipped Pumpkin Butter
½ stick butter, softened
2 ½ tablespoons pumpkin puree
1 ½ tablespoons maple syrup
½ teaspoon vanilla extract
¼ teaspoon cinnamon
⅛ teaspoon nutmeg
⅛ teaspoon dried ground ginger
Steps
In a shallow bowl, crack and add 4 egg, pour in ⅔ cup of milk, spoon in ½ cup of pumpkin puree, add 1 teaspoon of cinnamon, ¼ teaspoon of nutmeg, ¼ teaspoon of ground ginger, and 1 teaspoon of vanilla extract
Whisk the ingredients together until all combined
Melt a small pad of butter on a stove top griddle and spread the butter across the surface
Take a slice of thick white bread and dunk it in the egg batter, thoroughly coating both sides
Lift the coated slice up and place on the griddle to cook for 3 minutes
After about 3 minutes, carefully flip the bread over to cook the other side of the toast
The pumpkin french toast is done when both sides are golden brown
Remove the cooked french toast from the griddle and place on a separate platter
Continue the bread coating, cooking, and flipping process until all the batter is used up
Serve and enjoy your pumpkin french toast with some whipped pumpkin butter on the side
For the Whipped Pumpkin Butter
Add ½ stick of softened butter to a bowl
Beat the butter until it is light and creamy
Scrape down the sides of the bowl as needed
To the whipped butter, add 2 ½ tablespoons pumpkin puree, 1 ½ tablespoons maple syrup, ½ teaspoon vanilla extract, ¼ teaspoon cinnamon, ⅛ teaspoon nutmeg, and ⅛ teaspoon dried ground ginger
Beat all the ingredients together to combine to form the whipped pumpkin butter
