Red Velvet Pancakes

Red Velvet Pancakes with Cream Cheese Frosting Drizzle

Ingredients

  • 1 ½ cups flour

  • 3 tablespoons sugar

  • 2 tablespoons cocoa powder

  • 1 ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 2 eggs

  • 1 ½ cups milk

  • 3 tablespoons vegetable oil

  • Red food coloring


For the icing

  • 4 oz cream cheese, softened

  • 1 cup confectioners sugar

  • 1 teaspoon vanilla extract

  • 3 to 4 tablespoons milk


Steps

  1. Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a bowl and stir to combine

  2. Add in the eggs, milk, and vegetable oil and mix until no large clumps of flour remain

  3. Add in the red food coloring and mix

    1. Continue adding in more red food coloring until the batter becomes a bright red

For the icing

  1. Combine the cream cheese, confectioners sugar, and vanilla extract in a bowl

  2. Beat with a handheld mixer until smooth and creamy

  3. Add in milk a tablespoon at a time until icing is pourable

  1. Heat a griddle over medium heat and grease with butter or cooking spray

  2. Scoop ⅓ cup of the pancake batter onto the griddle

  3. Cook on medium-low heat until small bubbles form and flip pancake

    1. Don’t let pancake over cook as the red color will burn

  4. Place on a platter and continue to cook the remaining pancakes

  5. Drizzle cream cheese icing over the pancakes
