Red Wine Spaghetti
Ingredients
1 pound spaghetti
1 750-mL bottle dry red wine
4 tablespoons butter
1 ½ tablespoons olive oil
3 teaspoons minced garlic
½ teaspoon red pepper flakes
Salt, to taste
Steps
Add minced garlic and olive oil in a pan and and saute over medium heat
Add the red pepper flakes and 1 tablespoons of butter
Cook, stirring occasionally, until the garlic is fragrant but not browned, about 3 minutes
Add the wine and increase the heat to medium-high and bring to a boil
Cook, uncovered, until reduced by two-thirds for 20 minutes
Season with some salt to taste
Cover and keep sauce warm
While the red wine sauce is simmering, bring a large pot of water to a boil and cook the pasta until very al dente, about 3 minutes less than the recommended cook time
Drain the pasta and add to the sauce along with the 3 remaining tablespoons of butter
Set pan on medium heat and bring the sauce to a simmer
Cook, tossing often, until the pasta is will coated and the sauce is thickened, about 3 minutes
Serve and top with some grated cheese if desired
