Barbecue Ribs

Ingredients

  • St. Louis style pork ribs

  • ½ cup brown sugar

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 teaspoon chili powder

  • ¼ cup barbecue sauce


Steps

  1. Combine the brown sugar, salt, black pepper, garlic powder, paprika, and chili powder to make the dry rub

  2. Score the back of the bones of each rack of ribs and carefully cut off and pull to remove as much as the thin white membrane

    1. Try to leave the fat on the ribs as that renders off while baking and contributes to the tenderness of the meat

  3. Place each rack of ribs in a large sheet of aluminum foil, enough to cover and wrap the ribs

  4. Pat and rub the dry rub all over on both sides of each rack of ribs

  5. Cover the ribs bone side down on the bottom with the aluminum foil and place on a baking tray

  6. Bake the ribs at 275 degrees Fahrenheit for 3 hours

  7. Remove the ribs from the oven and open the aluminum foil. You should start to see the ribs already pulling away from the bone

  8. Brush some barbecue sauce all over the top of the meat

  9. Lightly recover the ribs with the barbecue sauce

  10. Continue baking the ribs for 15 minutes

  11. Remove the ribs from the oven to reveal juicy, tender, fall-off-the-bone ribs
