Sausage & Broccoli Rabe

Ingredients

  • 1 pound small to medium sized shape pasta

  • 1 pound Italian sausage, removed from casings (sweet or hot)

  • 1 large bunch fresh broccoli rabe, trimmed and washed

  • 1 teaspoon minced garlic

  • ¼ cup dry white wine

  • Grated parmesan cheese

  • Salt & pepper, to taste


Steps

  1. Bring a large pot of water to a boil

  2. Add the broccoli rabe and cook for 3 minutes

  3. Remove the broccoli rabe with tongs and place in a colander to drain

  4. Coarsely chop the broccoli rabe into bite sized pieces and set aside

  5. In the same large pot of boiling water, add the pasta and cook according to package instructions until al dente

  6. Meanwhile, in a large skillet, add 1 pound of crumbled sausage and cook over medium-high heat breaking apart into smaller pieces with a wooden spoon, until lightly browned, 5 to 6 minutes

  7. Reduce the heat to medium and add the minced garlic; cook for 1 minute more

  8. Add the white wine to the pan and deglaze the pan, scraping any browned sausage bits off the bottom of the pan

  9. Lower the heat to medium-low and add the cooked chopped broccoli rabe

  10. Drain the cooked pasta and add to the saucepan with the sausage and broccoli rabe. Combine gently together

  11. If too dry, add a little of the pasta water

  12. Taste and adjust seasonings with salt and pepper

  13. Plate and garnish with grated cheese, if desired

  14. Serve immediately
