Scallion Pancakes

Ingredients

  • 2 cups flour, plus more for rolling

  • 1 cup boiling water

  • 1 cup chopped scallions

  • Sesame oil

  • Vegetable oil for frying


Steps

  1. Measure 2 cups of flour into a medium sized bowl

  2. Gradually add some hot water a couple tablespoons at a time to the flour, stirring in between each addition with some metal chopsticks

  3. Continue to mix in the water until a shaggy dough forms

  4. Remove the chopsticks from the dough and begin to incorporate the flour with your hands

  5. Spread some flour on a flat surface and turn out the pancake dough and knead a few turns

  6. Then place the dough back in the bowl and cover with a damp towel to rest for a half hour

  7. Divide the dough into 4 equal sized pieces

  8. Roll out each section of dough one at a time until an eighth of an inch thick

  9. Sprinkle some sesame oil on top and spread it all over the pancake with the back of a spoon

  10. Gently roll the dough up into a log

  11. Shape the roll into a spiral tucking the end underneath and press down with your hand to flatten

  12. Roll out the dough again with a rolling pin

  13. Sprinkle some more sesame oil on top and spread it all over the pancake

  14. Then sprinkle some of the cut scallions on the pancake

  15. Gently roll the dough up again with the scallions shape the log into a spiral tucking the end underneath and pressing dough with your hand to flatter

  16. Then re-roll out the dough one last time with a rolling pin

  17. Continue this process for all the pancakes, rolling out, coating with sesame oil, rolling up, forming a spiral, pressing down, rolling out again, adding more sesame oil, sprinkling some scallion, rolling up again, shaping your spiral, pressing down, and rolling out one last time

  18. Add some vegetable oil to a large frying pan and heat over medium heat

  19. Place one of your scallion pancakes in the hot oil and allow to pan fry for a few minutes before flipping it over

  20. Continue to cook and flip your scallion pancake until they turn a nice golden brown

  21. Remove your cooked scallion pancake from the pan and set aside on a separate plate

  22. Cook the remaining scallion pancakes and cut into triangle shaped wedges to serve and enjoy!
