Shrimp Scampi
Ingredients
1 pound spaghetti noodles
1 pound shrimp, peeled and deveined
3 tablespoons olive oil
3 tablespoons butter
3 heaping teaspoons minced garlic
Salt, to taste
Black pepper, to taste
1 teaspoon crushed red pepper flakes
½ cup dry white wine
¼ cup lemon juice
¼ cup freshly chopped parsley, plus more for serving
Grated parmesan cheese, for serving
Steps
Bring a large pot of water to a boil
Add 1 pound of spaghetti noodles to the water
Cook the spaghetti until al dente according to the packaging directions, stirring periodically
To a large saute pan, add 3 tablespoons of olive oil and 3 tablespoons of butter
Turn the stove on medium heat to melt the butter and heat the oil
Add 3 heaping teaspoons of minced garlic to the butter and oil and stir as the garlic sautes for 30 seconds
Add 1 pound of raw peeled and deveined shrimp to the pan
Take the time to spread the shrimp so it is in an even layer across the bottom of the pan
Season the shrimp with some salt and black pepper to taste
After 1 minute of cooking, flip the shrimp over so the other side can cook and season with some more salt and black pepper to taste
Pour ¼ cup of lemon juice and ½ cup of dry white wine over the shrimp
Season the shrimp with 1 teaspoon of crushed red pepper flakes
Stir to combine the shrimp with the lemon juice, wine, and pepper
On the side, before draining the pasta, reserve a few ladlefuls of the starchy pasta water
Then drain the cooked spaghetti noodles
Add the drained pasta to the shrimp
Toss to combine the spaghetti with the shrimp and scampi sauce
Sprinkle ¼ cup of freshly chopped parsley on top and toss once more to distribute
If needed, pour a splash of the reserved pasta water over the shrimp scampi and stir to combine and enjoy
