Slow Cooker Split Pea Soup
Ingredients
1 pound dried green split peas, sorted & rinsed
1 medium-sized onion, finely diced
1 cup diced carrot
1 cup sliced celery
2 cups diced ham
2 teaspoons minced garlic
1 teaspoon black pepper
2 heaping teaspoons dried parsley
½ teaspoon dried thyme
¼ teaspoon crushed dried bay leaves (or 1 whole dried bay leaf)
32 oz (4 cups) chicken stock/broth - low sodium!
2 cups water
Steps
Cut and prepare all the vegetables and ham - Sort and rinse the split peas and dice the onion, carrot, celery, and ham
Add all the ingredients to a slow cooker of at least 6 quarts in size
Gently stir the seasonings, ingredients and liquids together to evenly distribute
Place the lid on the slow cooker and turn it on low for 8 hours
After 8 hours, your split pea soup should be bubbling and done cooking
Remove the lid from the pot
If you used a whole bay leaf, pick that out of the soup before serving!
Stir the soup together to redistribute all the ingredients
At this point, you will see that the split peas have essentially melted into the soup
Ladle the soup into a small bowl to serve and enjoy!
