S'mores Bars
Ingredients
1 stick butter, softened to room temperature
½ cup white granulated sugar
¼ cup brown sugar
1 egg
2 teaspoons vanilla extract
1 ¼ cups flour
1 cup graham cracker crumbs
1 teaspoon baking powder
¼ teaspoon salt
8 ounces Hershey’s chocolate bars, enough to cover an 8 or 9 inch square baking dish
2 cups mini marshmallows
Steps
Combine 1 ¼ cups flour, 1 cup graham cracker crumbs, 1 teaspoon baking powder, and ¼ teaspoon salt in a bowl
Add 1 stick of softened butter, ½ cup white granulated sugar, and ¼ cup of brown sugar to a mixer bowl
Place the paddle attachment on the mixer and beat to cream the butter with the sugars until light and creamy
Scrape down the sides of the bowl as needed
Add 1 egg and mix again to incorporate
Add 2 teaspoons of vanilla extract and beat again
Gradually add a portion of the flour and graham cracker crumb mixture and mix until combined
Scrape down the sides of the mixer bowl to ensure all the dry ingredients get incorporated
Continue to add the rest of flour and graham cracker crumb mix and beat again until everything is combined and a soft cookie dough forms
Line a 9 inch square baking dish with some tin foil and thoroughly grease the foil with some butter
Spoon about half of the prepared graham cracker cookie dough into the baking dish
Use your fingertips to spread the cookie crust smooth across the bottom of the dish - ensuring all gaps are covered with the dough
Bake the cookie crust in the oven at 350 degrees Fahrenheit for 15 minutes
Remove the cookie crust from the oven to continue assembling
Lay out about 8 ounces of Hershey’s chocolate bars across the top of the baked crust ensuring the entire crust is covered in an even layer of chocolate
Next spread about 2 cups worth of mini marshmallows across the top of the chocolate bars
With the remaining half of the graham cracker cookie dough, scoop small handfuls of the dough and flatten into small rounds between the palms of your hands
Lay the flattened pieces of dough across the top of the marshmallows trying to cover as much as the area as possible
For added Hershey’s theming, scatter a few small squares of Hershey’s chocolate across the top of the cookie dough crust
Bake the s’mores bars in the oven at 350 degrees for 15 more minutes
Remove the s’mores bars from the oven and allow to cool completely before cutting and serving
