Spaetzle

Ingredients

  • 2 cups flour

  • 1 teaspoon salt

  • ¼ teaspoon cumin

  • ½ cup milk plus more as needed

  • 4 eggs

  • 2 tablespoons butter


Steps

  1. Bring a large pot of water to a boil

  2. Add 2 cups of flour, 1 teaspoon of salt, ¼ teaspoon of cumin, ½ cup of milk, and 4 eggs to a bowl

  3. Mix with a wooden spoon until everything is combined

  4. If the batter is too thick, add a splash more a milk and mix again

  5. If the batter is too liquidy and running, add a little bit more of flour, a half tablespoon at a time

  6. Spoon small amounts of the spaetzle batter over a spaetzle maker or the backside of a flat, large holed cheese grater

  7. Push the batter through the holes to allow small droplets of spaetzle to land in the pot of boiling water

  8. Work in small batches adding more batter and when the spaetzle rises to the top of the water, it is done cooking

  9. Remove the cooked spaetzle with a slotted spoon and transfer to a platter

  10. Add 1 tablespoon of butter over the warm spaetzle

  11. Continue to cook the remaining batter and add more warm cooked spaetzle on top

  12. Add the second tablespoon of butter over the spaetzle
