Spaetzle
Ingredients
2 cups flour
1 teaspoon salt
¼ teaspoon cumin
½ cup milk plus more as needed
4 eggs
2 tablespoons butter
Steps
Bring a large pot of water to a boil
Add 2 cups of flour, 1 teaspoon of salt, ¼ teaspoon of cumin, ½ cup of milk, and 4 eggs to a bowl
Mix with a wooden spoon until everything is combined
If the batter is too thick, add a splash more a milk and mix again
If the batter is too liquidy and running, add a little bit more of flour, a half tablespoon at a time
Spoon small amounts of the spaetzle batter over a spaetzle maker or the backside of a flat, large holed cheese grater
Push the batter through the holes to allow small droplets of spaetzle to land in the pot of boiling water
Work in small batches adding more batter and when the spaetzle rises to the top of the water, it is done cooking
Remove the cooked spaetzle with a slotted spoon and transfer to a platter
Add 1 tablespoon of butter over the warm spaetzle
Continue to cook the remaining batter and add more warm cooked spaetzle on top
Add the second tablespoon of butter over the spaetzle
