Strawberry Pie
Ingredients
For the crust
1 ¼ cups flour, divided, plus more for rolling
½ teaspoon salt
1 tablespoon sugar
6 tablespoons cold, cubed butter
4 tablespoons shortening
1 tablespoon vodka
For the filling
1 to 2 pounds strawberries, hulled and thickly sliced
1 ½ cups water
¾ cup sugar
2 tablespoons cornstarch
3 ounce packet strawberry jello
Steps
For the crust
To a food processor, add ¾ cup flour, ½ teaspoon salt, and 1 tablespoon sugar
Pulse to just combine
Add 6 tablespoons cold, cubed butter and 4 tablespoons shortening
Pulse again to process until a homogenous dough just comes together
Scrape the bowl with a rubber spatula and redistribute the dough evenly around the blade
Add the remaining ½ cup flour and pulse again until the mixture is evenly distributed
Transfer the dough to a separate bowl
Add 1 tablespoon of vodka and use a rubber spatula to fold and mix the dough together until combined
Place the dough on a sheet of plastic wrap and pat and press it down to form a round disc about 4 inches in size
Cover the dough in the plastic wrap
Place the dough in the fridge to chill for at least 1 hour or up to overnight
Use a rolling pin to press and roll out the dough into a large circle and transfer the dough to a 9 inch round pie pan
Bake the pie crust in the oven at 375 degrees Fahrenheit for 30 minutes
Then remove the crust and allow to cool completely
For the rest of the pie
Arrange thick strawberry slices all around the cooled pie crust, filling the pie shell completely just to the top with strawberries but not overfilling it either
Pour 1 ½ cups water into a small saucepan and add ¾ cup sugar and 2 tablespoons cornstarch
Stir as you heat the water, sugar, and cornstarch together until everything is dissolved and combined
Allow the mixture to boil for 2 minutes
Add in a 3 ounce packet of strawberry jello and stir until just dissolved
Slowly pour the jello mixture all over the strawberries, being sure to evenly distribute the jello and fully cover the berries
Place the strawberry pie in the fridge to chill and allow the jello to fully set until serving
