Strawberry Upside Down Cake
Ingredients
1 pound fresh strawberries, hulled and thinly sliced
1 stick butter, divided
½ cup brown sugar
⅔ cup white granulated sugar
2 eggs
2 teaspoons vanilla extract
½ teaspoon salt
2 teaspoons baking powder
1 ½ cups flour
½ cup buttermilk
Steps
Add 3 tablespoons of butter to a 9 inch round cake dish and place the pan in the oven at 350 degrees, removing when the butter is just melted
Sprinkle ½ cup brown sugar on top of the melted butter and stir to combine and spread the mixture smooth across the bottom of the pan
Lay out the sliced strawberries on top of the butter and brown sugar mixture, making sure to cover the entire pan and any gaps in between the slices
Arrange a single layer of strawberries around the sides of the pan as well
To a mixer bowl, add 5 tablespoons of room temperature softened butter and ⅔ cup sugar
Affix the paddle attachment to the mixer and beat to cream the butter and sugar until light and creamy
Scrape down the sides of the mixer bowl as needed
Add 2 eggs, 1 at a time, beating well in between each addition
Add 2 teaspoons of vanilla extract and mix again
Add ½ teaspoon salt, 2 teaspoons baking powder, and gradually add 1 ½ cups flour
Turn the mixer on to incorporate the dry ingredients and alternate by pouring in a half cup of buttermilk with the remaining flour, going back and forth until all the flour and buttermilk has been just incorporated
Scrape down any loose flour from the sides of the mixer bowl and mix one last time to combine
Pour the vanilla cake batter all over the layered strawberries being sure that all the strawberries are covered and the batter is smooth across the top
Bake the cake in the oven at 350 degrees Fahrenheit for 35 to 45 minutes
Remove the cake from the oven when a toothpick inserted in the center of the cake comes out clean and let the cake cool in the pan for 20 minutes
Place a serving plate on top of the cake and carefully invert the baking dish holding the plate together
Then lift the pan up to reveal your strawberry upside down cake
