Stuffed Baked Potatoes
Ingredients
4 medium baking potatoes
1 ½ tablespoons vegetable oil
2 tablespoons butter
½ cup milk
¼ teaspoon salt
Black pepper, to taste
3 ounce cream cheese, softened
Steps
Wash and scrub 4 potatoes
Poke some holes with a fork in the potatoes being sure to piece the potato skin
Rub the potatoes all over with some vegetable oil
Bake the potatoes in the oven at 400 degrees Fahrenheit for 1 hour or until they are thoroughly cooked and soft in the center
Cut the cooked potatoes in half lengthwise
Carefully scoop the cooked potato out of the potato skins, leaving some potato behind to hold the skin together, and place in a mixing bowl
Add 2 tablespoons of butter, ½ cup of milk, 3 ounces of softened cream cheese, ¼ teaspoon of salt, and plenty of black pepper to taste
Mash the potato insides with the remaining ingredients until lump free
Fill the potato skin shells with the filling and place on a glass serving dish or platter
Heat the potatoes again in the oven at 400 degrees Fahrenheit for 15 minutes
