Stuffing Stuffed Pumpkins
Ingredients
2 small 3-pound sugar pumpkins
Vegetable oil
Salt, to taste
Black pepper, to taste
1 cup diced celery
1 cup diced carrot
1 cup diced onion
½ cup chopped fresh cranberries
1 teaspoon minced garlic
Dried, crushed sage, to taste
10 ounces chestnuts, roughly chopped
6 cups dried bread cubes
1 cup chicken broth
1 egg, beaten
Steps
Use a sharp knife to carefully cut the tops off 2 small sugar pumpkins
Scrape and scoop out all the pumpkin seeds and inner stringy pulp bits
Drizzle some vegetable oil into each cleaned out pumpkin and use your hands to spread the oil all around the inside of the fruit
Season the inside of the pumpkins with some salt and black pepper to taste
Place the tops back on the pumpkins
Bake the pumpkins in the oven at 400 degrees Fahrenheit for 1 hour
Add 2 tablespoons of vegetable oil to a saute pan
Add 1 cup of diced celery, 1 cup of diced carrots, 1 cup of diced onion, and ½ cup of chopped fresh cranberries to the pan
Turn the stove heat on medium and stir to combine the vegetables together as they cook and soften
Add 1 teaspoon of minced garlic and stir again to combine
Season with some salt and black pepper to taste and sprinkle some crushed dried sage
Stir the pan again to incorporate
Add 6 cups of dried bread cubes into a large bowl
Drizzle and pour 1 cup of chicken broth over the bread cubes
Use a wooden spoon to stir the bread cubes and saturate with the broth
After 1 hour, take the whole cooked pumpkins out of the oven and remove the cooked tops off of them
Add the cooked vegetables and cranberries over the soaked bread cubes and stir to combine
Add 10 ounces of chopped chestnuts and stir again
On the side, beat one egg and then pour the beaten egg into the stuffing and stir once more until the egg is incorporated
Spoon the stuffing in the cooked pumpkins, pressing the stuffing down with the back of a spoon to fully stuff the pumpkin
Bake the stuffing stuffed pumpkins in the oven at 400 degrees Fahrenheit for 30 minutes - but leave the tops off this time!
Then remove the stuffing stuffed pumpkins from the oven to enjoy
