Sweet Potato Casserole
Ingredients
6 medium-size sweet potatoes
½ cup brown sugar
2 eggs
1 teaspoon vanilla extract
⅓ cup milk
½ cup melted butter
1 cup brown sugar
2 tablespoons flour
¼ cup butter
1 cup walnuts, coarsely chopped
Steps
Wash and scrub potatoes
Place sweet potatoes in a large pot and cover with cold water
Bring to boil and cook for 30 to 45 minutes, or until tender
Let potatoes cool to touch
Peel and mash potatoes
Combine sweet potatoes, ½ cup brown sugar, 2 eggs, 1 teaspoon of vanilla extract, ⅓ cup of milk, and ½ cup melted butter
Beat at medium speed with an electric mixer until smooth
Spoon into a greased 9” x 13” baking dish
Combine 1 cup of brown sugar and 2 tablespoons of flour
Cut in ¼ cup of butter until mixture is crumbly
Stir in chopped walnuts
Sprinkle mixture over casserole
Bake at 350 degrees Fahrenheit for 30 to 35 minutes, or until lightly browned and bubbly around the edges
