Sweet Potato Casserole

Ingredients

  • 6 medium-size sweet potatoes

  • ½ cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • ⅓ cup milk

  • ½ cup melted butter

  • 1 cup brown sugar

  • 2 tablespoons flour

  • ¼ cup butter

  • 1 cup walnuts, coarsely chopped

Steps

  1. Wash and scrub potatoes

  2. Place sweet potatoes in a large pot and cover with cold water

  3. Bring to boil and cook for 30 to 45 minutes, or until tender

  4. Let potatoes cool to touch

  5. Peel and mash potatoes

  6. Combine sweet potatoes, ½ cup brown sugar, 2 eggs, 1 teaspoon of vanilla extract, ⅓ cup of milk, and ½ cup melted butter

  7. Beat at medium speed with an electric mixer until smooth

  8. Spoon into a greased 9” x 13” baking dish

  9. Combine 1 cup of brown sugar and 2 tablespoons of flour

  10. Cut in ¼ cup of butter until mixture is crumbly

  11. Stir in chopped walnuts

  12. Sprinkle mixture over casserole

  13. Bake at 350 degrees Fahrenheit for 30 to 35 minutes, or until lightly browned and bubbly around the edges
