Tomato Pie

Ingredients

  • 1 pound worth of large tomatoes

  • 1 14-ounce pie crust

  • ½ cup thinly sliced scallions

  • 1 teaspoon dried basil

  • Salt

  • Black pepper

  • ½ heaping cup mayonnaise

  • ½ cup shredded cheddar cheese

  • 4 strips of bacon

  • 2 tablespoons grated Parmesan cheese


Steps

  1. Unroll a pre-made pie crust over a 9 inch round pie pan

  2. Press down on the bottom and along the sides of the pie crust to fit the pie pan

  3. Prebake the pie crust in the oven at 350 degrees Fahrenheit for 10 minutes

  4. Cut the tomatoes into thick, half inch slices

  5. Cook the bacon in a skillet over medium heat until it is crispy

  6. Transfer the cooked bacon to a paper towel lined plate

  7. Add one heaping cup of mayonnaise to a bowl followed by a half cup of shredded cheddar cheese

  8. Mix the mayonnaise with the cheese until smooth and combined

  9. Place the sliced tomatoes along the bottom of the prebaked pie crust, forming an even layer

  10. Add some smaller tomato slices on top to fill in the gaps

  11. Sprinkle the tomatoes with the sliced scallions

  12. Place another single layer of tomato slices on top

  13. Season the tomatoes with some salt, black pepper, and dried basil

  14. Spread the cheese mixture on top of the seasoned tomatoes until it is even and smooth across the top of the pie and covers the tomatoes

  15. Crumble the precooked bacon into small pieces all over the spread out cheese mixture

  16. Sprinkle the grated parmesan cheese on top

  17. Bake the tomato pie in the oven at 350 degrees Fahrenheit for 35 minutes
