Tres Leches Cake
Ingredients
1 cup flour
1 ½ teaspoons baking powder
¼ teaspoon salt
6 eggs, separated
1 cup sugar, divided
⅓ cup milk
1 teaspoon vanilla extract
14 ounce can sweetened condensed milk
12 ounce can evaporated milk
1 ⅓ cup heavy cream, divided
Cinnamon, for dusting
Steps
In a small bowl combine 1 cup flour, 1 ½ teaspoons baking powder, and ¼ teaspoon salt
Carefully crack and separate 6 eggs, letting the egg whites fall into one mixing bowl and placing the egg yolks in another large bowl
Affix the whisk attachment to the mixer and beat the egg whites until they have turned white
Add ¼ cup sugar to the egg whites and continue to beat until the egg whites are fluffy and can hold stiff peaks
Add ¾ cup sugar to the 6 egg yolks and use an electric mixer to mix on high speed until the yolks are pale yellow
Beat ⅓ cup milk and 1 teaspoon vanilla extract with the egg yolk mixture until just combined
Add the flour mix to the egg yolk mix and stir gently until combined being careful to not overmix
Fold the stiffly beaten egg whites into the batter, scraping the bottom and sides of the bowl, until combined
Pour the cake batter in a smooth even layer into a greased 9 by 13 inch baking dish
Bake the cake in the oven at 350 degrees Fahrenheit for 30 to 35 minutes
Remove the cake from the oven and allow it to cool completely
In the meantime, in a large measuring cup whisk together a 14 ounce can of sweetened condensed milk, a 12 ounce can of evaporated milk, and ⅓ cup heavy cream
After the cake is cool, use a fork to poke holes all over the top of the cake
Alternatively, you could also use a toothpick to poke the holes
Slowly pour the milk mixture all over the the top of the cake, making sure to pour near the edges and all around
Keep pouring gradually soaking the entire cake until you’ve used all the milk
Cover the cake with a piece of plastic wrap and place in the fridge for at least 1 hour but ideally overnight to allow it to fully soak up the sweet milk mixture
Pour 1 cup of heavy cream in a mixing bowl and whip until the cream holds stiff peaks
Uncover the cake and spread the whipped cream all over the top in a smooth even layer
Finish by sprinkling some cinnamon all the top and enjoy
